Personally feel that it works great, but it doesn't offer too much insight on ...

I'm starting a snack company and I bought this to seek for help on the technical side of it. Personally feel that it works great, but it doesn't offer too much insight on many products (just a few). I'm doing cassava chips and I have problems with starch. I was trying to look for a solution for my problems here, but its not covered in any depth. Now, if you're working with potato chips (which I will, in the future) it works for an awesome guide. Gives you a clear view of the type of production lines and methods available and it surely helps as a mind opener.
